1 whole month as a vegetarian!

So today marks 1 month of being a fully pledged veggieee, i actually couldnt feel better. This evening im in a mexican to celebrate, iv watched my friends all tuck into the steak and ribs, i of course had vegetable fajitas. (blogging from my phone)
Iv had a lot of support, from my mum who's purchased and cooked my food every evening, my boyfriend for buying me vegetarian alternatives, my friend stef at work who guides me on what to and not to eat and continues to pat me on the back every morning proud when i tell him I didn't eat meat when I got in the night before & my best friend Jill for showing me lots of support, arranging my tattoo and encouraging me not to be sad when I slip up, like yesterday and ate a poxy liquorice and later found out it contained gelatin, then proceeded to strop around and wipe tears from my eyes.
Thankyou.
Here's to the next month!

Bunny.

Avocado/Spinach Grilled Cheese.



Cucumber Rounds With Hummus.





1 (14-oz.) can chickpeas, rinsed and drained
2 chipotle peppers canned in adobo sauce, stemmed, plus 1 tsp. sauce
1 large clove garlic, coarsely chopped
3 Tbsp. fresh lemon juice
3 Tbsp. tahini (mix well before measuring)
2 Tbsp. extra virgin olive oil
2 Tbsp. white rum, or to taste
1 tsp. ground cumin
1/4 tsp. kosher salt, plus extra for sprinkling
1 large English (seedless) cucumber
1 Tbsp. sesame seeds, toasted in a dry skillet until just golden

In a medium bowl, place the chickpeas, chipotles with reserved sauce, garlic, lemon juice, tahini, olive oil, rum, cumin, and salt. Purée with an immersion or a standing blender*—scraping down the sides of the bowl as necessary—about 2 minutes, until the mixture is smooth and fluffy.

With a vegetable peeler, peel the cucumber skin lengthwise at 1/4-inch intervals to create a striped pattern around the circumference and slice it crosswise into 1/4-inch rounds. (If the cucumber skin is tough, peel it entirely.) Arrange the rounds on a platter.

Lightly salt the rounds. Top each with a generous teaspoonful of hummus. Sprinkle with sesame seeds.

Heyy.

Heya Everybody, Im Emily, im 22 and live just outside of London. 

On the 25th December 2012, i decided to completely cut meat from my diet and be completely Vegetarian. Since i have done soooo much research, on foods i can/cant eat, also products which i shouldn't be using, ethical clothes etc. i hope to be able to show other why exactly i have a meat free diet, what inspires me, recipes i may come across and animal friendly clothing.
